A perennial herb grown more commonly in centuries past, when it had uses ranging from restoring the appetite to sprinkling in the shoes of weary travelers. Leaves and seeds used today in some southern European cuisines. Large plants have a celery-like appearance and flavor for cooking and drying. The leaves can be used like parsley or celery and the roots can be eaten as a vegetable or grated in a salad. Leaves can also be used in spring tonic salads and with potato, rice, soups, and poultry dishes. Use the hollow stems as ecofriendly straws for summertime cockatails.
